Ingredients
  

  • 1 cup watermelon seeds raw and unsalted
  • 2 oz tequila preferably silver
  • 1 oz lime juice freshly squeezed
  • 0.5 oz simple syrup adjust to taste
  • 1 cup fresh watermelon chunks seedless if possible
  • ice cubes Ice

Method
 

  1. Spread watermelon seeds evenly on a baking sheet and lightly toast in a preheated oven at 350°F (180°C) for 3-4 minutes until golden and fragrant. Remove and let cool.

  2. Add the toasted watermelon seeds to a blender along with fresh watermelon chunks. Blend until the mixture is smooth and seed particles are broken down, about 30-45 seconds.

  3. Strain the blended mixture through a fine mesh sieve into a mixing bowl, pressing gently to extract liquid while leaving most seed material behind. Discard the solids.

  4. Fill a cocktail shaker halfway with ice cubes. Pour in the strained watermelon seed juice, tequila, lime juice, and simple syrup. Shake vigorously for 15 seconds until well chilled and combined.

  5. Strain the mixture into chilled cocktail glasses. Garnish with small watermelon wedges or a lime twist as desired. Serve immediately.

Notes

For a more intense watermelon seed flavor, increase to 3-4 minutes of toasting. Adjust sweetness by varying the simple syrup amount to taste.
