  • 4 cups watermelon, cubed seedless or de-seeded
  • 2 tablespoons fresh lime juice about 1 lime
  • 8 leaves fresh mint leaves roughly torn

Method
 

  1. Prep the watermelon by cutting it into chunks if not already cubed, removing seeds if necessary. Place the watermelon cubes into the blender.
  2. Add the fresh lime juice and torn mint leaves to the blender with the watermelon. Secure the lid tightly.
  3. Blend on high speed for about 30 seconds until the mixture is smooth and slightly pulpy, with the mint evenly distributed. You should see a vibrant pink-green color and a consistent texture with small pulp pieces.
  4. Pour the blended mixture through a fine strainer into a pitcher, pressing gently with a spatula to extract as much liquid as possible while leaving larger pulp out. Discard the pulp residue.
  5. Transfer the strained juice into glasses. If desired, add ice cubes for extra chill. Garnish with additional mint leaves or small watermelon wedges.
  6. Serve immediately while cold, with visible flecks of mint and watermelon pulp, ensuring a refreshing and aromatic appearance and texture.
