Ingredients
  

  • 4 cups watermelon, cubed seedless or de-seeded
  • 2 pieces limes, juiced about 1/4 cup of juice
  • 1/4 cup tequila silver or blanco preferred
  • to taste honey or simple syrup optional, for sweetness

Method
 

  1. Use a knife and cutting board to remove the rind from the watermelon and cut it into roughly 1-inch cubes, then transfer the cubes to the blender.

  2. Add fresh lime juice and tequila to the blender with the watermelon cubes. If desired, include a teaspoon of honey or simple syrup for added sweetness.

  3. Secure the lid on the blender and blend on high speed until the mixture is smooth and slightly pulpy, about 30 seconds. You should see bright pink liquid with small chunks of watermelon pulp.
  4. If you prefer a smoother drink, pass the mixture through a fine strainer into a pitcher to remove excess pulp, pressing gently to extract as much liquid as possible.
  5. Pour the chilled watermelon mixture into glasses, filling them about three-quarters full. Serve immediately, garnished with a small lime wedge or a mint sprig if desired.

Notes

For an extra icy drink, blend in a handful of ice cubes or chill the mixture thoroughly before serving.
