Method
 

  1. Place the watermelon on a clean cutting board. Use a sharp chef's knife to cut off the rind, creating a flat edge to stabilize the fruit.
  2. Slice the watermelon into 1/2-inch thick planks, then cut each plank into stick-shaped pieces to resemble fries. Keep the shape rustic and irregular for visual appeal.
  3. In a small bowl, combine freshly grated lime zest, lime juice, honey or agave syrup (if using), and salt. Mix until well blended and the salt dissolves. Set aside as a dipping sauce.
  4. Arrange the watermelon fries on a serving platter, leaving space for dipping. Optionally, include small pieces of watermelon rind for added salty crunch and visual contrast.
  5. Serve immediately with the lime dipping sauce on the side. The watermelon should be firm yet juicy, with a vibrant color and a slightly glossy appearance from the natural moisture.
