- Place the watermelon on a clean cutting board. Use a sharp chef's knife to cut off the rind, creating a flat edge to stabilize the fruit.
- Slice the watermelon into 1/2-inch thick planks, then cut each plank into stick-shaped pieces to resemble fries. Keep the shape rustic and irregular for visual appeal.
- In a small bowl, combine freshly grated lime zest, lime juice, honey or agave syrup (if using), and salt. Mix until well blended and the salt dissolves. Set aside as a dipping sauce.
- Arrange the watermelon fries on a serving platter, leaving space for dipping. Optionally, include small pieces of watermelon rind for added salty crunch and visual contrast.
- Serve immediately with the lime dipping sauce on the side. The watermelon should be firm yet juicy, with a vibrant color and a slightly glossy appearance from the natural moisture.
