  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries diced
  • 8 oz cream cheese softened and cubed

Method
 

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined and slightly aerated.
  3. In a separate bowl, whisk the eggs, then add the melted butter, milk, and vanilla extract. Mix until smooth and well blended.
  4. Pour the wet mixture into the dry ingredients. Gently fold with a spatula until just combined; do not overmix, as this can develop gluten and make the muffins dense.
  5. Gently fold in the diced strawberries and pieces of cream cheese, distributing evenly without overmixing.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake for 20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean. When done, remove from oven and let cool slightly before serving.

Notes

For extra flavor, sprinkle top with a light dusting of powdered sugar before serving.
