  • 2 sticks cinnamon warm, sweet aroma
  • 4 whole cloves aromatic, intense flavor
  • 1 star star anise adds licorice note
  • 1 lemon sliced into rounds
  • 2 tablespoons honey natural sweetness
  • optional apple brandy a splash for depth, optional

Equipment

  • Heavy-bottomed pot
  • Wooden spoon
  • Fine mesh strainer
  • Measuring spoons

Method

  1. Pour the apple cider into a heavy-bottomed pot and place it over low to medium heat.
  2. Add the cinnamon sticks, cloves, and star anise to the cider, stirring gently with a wooden spoon.
  3. Heat the mixture until it just begins to simmer, with small bubbles forming around the edges, and the aroma filling the air.
  4. Reduce the heat to low, then add the lemon slices and honey, stirring until the honey dissolves completely.
  5. Allow the cider to simmer gently for 20 minutes, during which the spices bloom and flavors meld, filling the house with a warm, spicy aroma.
  6. Taste the cider and adjust sweetness or spice if desired, adding more honey or spices accordingly.
  7. Strain the cider through a fine mesh strainer into a clean pot or pitcher, removing all spice bits and lemon slices.
  8. Pour the hot, clear cider into mugs, garnishing each with a cinnamon stick or a thin slice of apple if desired.
  9. Let the cider rest for a minute to settle, then enjoy your cozy, fragrant drink.
