Ingredients

  • 1 lb large shrimp peeled and deveined
  • 8 oz fettuccine fresh or dried
  • 1 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 4 cloves garlic crushed
  • 4 tbsp butter unsalted, preferably European-style
  • 1 tbsp olive oil good-quality extra virgin
  • Salt and pepper to taste
  • Optional fresh herbs for garnish

Equipment

  • Large Skillet
  • Large pot
  • Tongs
  • Whisk

Method

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook until just al dente, about 8 minutes. Drain, reserving a cup of pasta water, and set aside.
  2. Meanwhile, heat a large skillet over medium heat. Add a tablespoon of olive oil, then place the shrimp in a single layer. Sear for 2-3 minutes per side until they turn bright pink, opaque, and slightly caramelized. Remove shrimp from the skillet and set aside.
  3. In the same skillet, melt the butter over medium-low heat. Add the crushed garlic and cook until fragrant, about 30 seconds, until it releases a sweet aroma and becomes golden.
  4. Pour in the heavy cream, stirring gently with a whisk. Bring it to a gentle simmer and cook for 2-3 minutes until the sauce begins to thicken and coat the back of a spoon.
  5. Gradually stir in the grated Parmesan cheese, a handful at a time, whisking until the cheese melts into a smooth, cheesy sauce. Taste and season with salt and pepper as needed.
  6. Return the seared shrimp to the skillet, tossing gently to coat them in the sauce. Warm through for about 1-2 minutes, allowing flavors to meld.
  7. Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. If the sauce seems thick, add a splash of the reserved pasta water to loosen it until silky and smooth.
  8. Cook for another minute over low heat to help the sauce cling to the pasta, then turn off the heat. Rest for a minute to let the flavors settle.
  9. Serve immediately, garnished with freshly chopped herbs and extra Parmesan if desired. Enjoy the creamy, cheesy, garlic-infused shrimp pasta that's perfect for any special occasion or comforting weeknight dinner.

Notes

Ensure the garlic is added just until fragrant to prevent burning. Reserve pasta water to adjust sauce consistency. Use high-quality Parmesan for the best flavor.
