Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or plant-based)
  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin spice blend
  • 1 tablespoon maple syrup or honey optional for sweetness
  • Pinch salt
  • optional toppings like chopped nuts, granola, or extra pumpkin spice

Equipment

  • Mixing bowl
  • Jar or airtight container
  • Spoon

Method

  1. Measure out the rolled oats and pour them into a mixing bowl.
  2. Add the pumpkin puree, milk, pumpkin spice, maple syrup, and a pinch of salt to the oats. Whisk until the mixture is smooth and well combined, with no lumps, and the oats are evenly coated.
  3. Pour the mixture into a jar or airtight container, spreading it out evenly.
  4. Seal the jar tightly and place it in the refrigerator to soak and chill for at least 4 hours or overnight, allowing the oats to soften and flavors to meld.
  5. Once chilled, open the jar and give the oats a gentle stir to ensure a creamy, uniform texture.
  6. Spoon the Pumpkin Spice Overnight Oats into bowls, and top with your favorite toppings such as chopped nuts, granola, or an extra sprinkle of pumpkin spice.

Notes

For added flavor variation, swirl in a dollop of yogurt or a drizzle of honey before serving. Keep refrigerated and enjoy within 2-3 days for best freshness.
