Ingredients

  • 4 large eggs fresh for best flavor
  • 1/2 cup cream heavy cream or milk
  • 1 pre-made mini pastry shells store-bought for convenience
  • 1/2 cup cheese shredded, optional (cheddar, Swiss, etc.)
  • 1/4 cup vegetables or meats chopped (spinach, ham, mushrooms, etc.)
  • 2 tablespoons fresh herbs chopped parsley, chives, or thyme
  • to taste salt and pepper for seasoning

Equipment

  • Mini muffin tin
  • Whisk
  • Pastry brush
  • Mixing bowls
  • Oven thermometer

Method

  1. Preheat your oven to 180°C (350°F) and place your mini muffin tin on a baking sheet to catch any spills.
  2. In a mixing bowl, whisk together the eggs and cream until the mixture is smooth and slightly frothy, with no lumps.
  3. Add a pinch of salt and pepper, and stir in your chopped herbs for a burst of freshness.
  4. Place the mini pastry shells in the muffin tin, making sure they sit snugly and evenly.
  5. Spoon a small amount of your chosen fillings—cheese, vegetables, or cooked meats—into each pastry shell, filling about three-quarters full.
  6. Carefully pour the egg mixture over each filled pastry shell, filling them until just full and avoiding spills.
  7. Place the muffin tin into the oven and bake for 15-20 minutes, until the bites are puffed, golden around the edges, and the filling is set.
  8. Once baked, remove the tin from the oven and let the bites cool for about 5 minutes—this helps them set and makes them easier to remove.
  9. Gently use a small spoon or knife to lift each mini quiche bite from the tin, being careful not to break the delicate shells.
  10. Serve the mini quiche bites warm or at room temperature, garnished with additional fresh herbs if desired, for a perfect bite-sized treat.

Notes

Feel free to experiment with different fillings—try smoked salmon, sautéed spinach, or cooked bacon for variety. Ensure fillings are not too wet to prevent soggy pastry. Keep an eye on baking time to avoid over-browning.
