Ingredients

  • 20 pieces cherry tomatoes ripe and deeply colored
  • 20 pieces fresh mozzarella balls about 1-inch diameter
  • 20 leaves fresh basil leaves large and fragrant
  • 1 bottle balsamic glaze for drizzling
  • to taste sea salt flaky preferred
  • to taste black pepper freshly ground

Equipment

  • Skewers
  • Grill pan or outdoor grill
  • Small bowl
  • Tongs

Method

  1. Gather all your ingredients: cherry tomatoes, mozzarella balls, basil leaves, balsamic glaze, and skewers.
  2. Soak the skewers in warm water for about 10 minutes to prevent burning on the grill. Drain and set aside.
  3. Thread a cherry tomato onto the skewer, followed by a basil leaf, then a mozzarella ball, repeating the pattern if desired for fuller skewers.
  4. Preheat your grill pan or outdoor grill to medium-high heat until hot and slightly smoky, creating a good sear for the ingredients.
  5. Place the skewers on the grill, turning gently with tongs every 2-3 minutes to achieve a light char and warm the cheese until it just starts to soften and bubble.
  6. Remove the skewers from the grill and transfer to a serving platter.
  7. Drizzle the skewers generously with balsamic glaze, allowing it to pool slightly for a glossy finish.
  8. Finish by sprinkling with flaky sea salt and freshly ground black pepper to enhance the flavors.
  9. Serve immediately while the cheese is warm and the flavors are bright, garnishing with extra basil if desired.
