Ingredients
  

  • 2 cups water enough to cover the herbs
  • 1 handful pineapple sage fresh sprigs
  • 1 handful rosemary fresh sprigs
  • 1 orange citrus peel fresh or dried, cut into strips
  • 1 lemon citrus peel fresh or dried, cut into strips
  • 1 stick cinnamon whole cinnamon stick

Method
 

  1. Pour the water into a small saucepan and place it over medium heat. Bring the water to a gentle simmer, watching it bubble softly.
  2. Add in the sprigs of fresh pineafy sage and rosemary to the hot water. Let them crackle gently as they start to release their herbal oils and aromas.
  3. Drop in the strips of citrus peel from orange and lemon to introduce zesty, citrusy scents that infuse the air with freshness. Observe the peels releasing their oils as they heat.
  4. Add the whole cinnamon stick for warm, sweet-spiced notes. Allow all ingredients to simmer together, releasing a fragrant aroma that fills the room.
  5. Reduce the heat slightly to maintain a gentle simmer, ensuring the herbs and spices don’t burn or evaporate too quickly. Keep an eye on the water level, adding more if needed to keep the mixture moist.
  6. Allow the mixture to simmer for about 20 to 30 minutes, during which the house fills with a complex, cozy scent of herbs, citrus, and spice. Feel free to add fresh sprigs or peels midway for a renewed aroma.
