Ingredients
  

  • 1 cup old-fashioned rolled oats preferably quick-cooking
  • 2 cups water
  • 2 tsp ground cinnamon
  • 2 apples fresh apples peeled, cored, and sliced
  • 1 tbsp olive oil for roasting apples
  • 1/4 cup white sugar
  • 1/4 cup buckwheat or oats for toasting

Method
 

  1. Preheat your oven to 400°F (200°C). Toss sliced apples with olive oil and sprinkle with half of the cinnamon and a little sugar. Spread them on a baking sheet and roast for about 10-12 minutes until tender and slightly caramelized.
  2. While the apples are roasting, bring water to a boil in a saucepan and stir in the oats, remaining cinnamon, and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, until the oats are thick and creamy, about 5-7 minutes.
  3. During the last few minutes of simmering, toast the oats on a dry skillet over medium heat, stirring frequently, until golden and fragrant. This adds a lovely crunch to the recipe.
  4. Once the oats are cooked and toasted, stir in the roasted apple slices into the oatmeal, allowing the flavors to meld for a minute or two.
  5. Serve the oatmeal hot, topped with the toasted oats for extra crunch. Optionally, drizzle with additional honey or sprinkle with nuts for added texture and flavor.
