Method
 

  1. Preheat your oven to 220°C (430°F). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare your vegetables: cut the broccoli into uniform florets, about 2 inches each, and slice the carrots diagonally into 1/2-inch thick pieces.
  3. In a large bowl, toss the broccoli and carrots with the olive oil until evenly coated. Sprinkle generously with sea salt and cracked black pepper, tossing again to distribute the seasoning.
  4. Spread the vegetables in a single layer on the prepared baking sheet, making sure not to overcrowd so they can caramelize properly.
  5. Roast in the oven for 20–25 minutes, shaking the pan or turning the vegetables halfway through to promote even browning and caramelization.
  6. Keep an eye on the edges; they should turn deep golden brown and crispy, with a rich, smoky aroma filling your kitchen.
  7. If needed, roast for an additional 3–5 minutes, but watch carefully to prevent burning. The vegetables should crackle slightly as they finish.
  8. Remove from the oven and let rest for about 5 minutes. If desired, squeeze fresh lemon juice over the top for a bright, zesty finish.
  9. Sprinkle with a pinch more flaky sea salt and drizzle with a little extra virgin olive oil for extra flavor and shine.
