  • 2 large eggs beaten
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter melted

Method

  1. Preheat the oven to 350°F (175°C) and grease a standard loaf pan with butter or non-stick spray.
  2. In a large mixing bowl, mash the ripe bananas until smooth with a fork or potato masher. Add the diced strawberries to the bananas and gently fold to combine, then set aside.

  4. Add the beaten eggs and melted butter to the banana-strawberry mixture, stirring until smooth and combined. Pour the wet mixture into the dry ingredients and fold gently just until no streaks remain. Do not overmix to keep the batter tender.

  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for about 50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer to a wire rack and cool completely before slicing. The loaf should be moist, with a slightly crusty exterior and visible chunks of fruit throughout.
