Autumn Spice Blend

This spice blend combines warming spices such as cinnamon, nutmeg, and star anise to infuse soups, stews, and other dishes with the flavors of fall. Ingredients
  

  • 2 teaspoons cinnamon sticks or ground cinnamon preferably whole cinnamon sticks for toasting
  • 1 teaspoon nutmeg freshly grated if possible
  • 1 star anise pod star anise whole for toasting
  • 1 teaspoon cloves whole or ground

Equipment

  • Toaster or skillet
  • Mortar and pestle or spice grinder

Method
 

  1. Place the whole cinnamon sticks, star anise, and cloves in a dry skillet over medium heat.
  2. Toast the spices for about 2-3 minutes, stirring occasionally, until they become aromatic and lightly browned.
  3. Remove the toasted spices from the skillet and let them cool briefly.
  4. Pick out the star anise pod and break the cinnamon sticks into smaller pieces if used whole.
  5. Add the toasted spices to a spice grinder or mortar and pestle.
  6. Grind the spices until they form a fine powder, releasing their essential oils and aroma.
  7. Transfer the ground spice blend to an airtight container or jar, and store for future use.

Notes

Adjust the quantities of spices to suit your taste. Using whole spices and toasting them enhances their flavor and aroma significantly.
